East End Ajwain Seeds are whole carom seeds, small, ridged and grey green, with a sharp thyme like aroma and a slight bite on the tongue. Indian cooks use ajwain in a pinch at a time: rubbed into paratha and puri dough, stirred into pakora and bhaji batter, and fried in ghee for dal and bean dishes. How to use it
Crush half a teaspoon between your palms over the bowl to release the oils, then knead it into atta for ajwain paratha, mathri or namak pare. Add a pinch to gram flour batter for onion bhajis, fish pakora and fried chillies, or fry it in hot ghee with cumin for a tarka over dal, chana or rajma. Cook it before eating, as the pack directs, and keep the opened pack in an airtight jar away from sunlight.
