Delmege Soya Vegetable Flavour is textured soya protein from the Sri Lankan food house Delmege, sold with a mixed vegetable flavour spice sachet. It is the gentlest blend in the range, with coriander, cumin, fennel, garlic, cinnamon, fenugreek, pandan and curry leaves, and a little rice flour that helps the seasoning coat the soya. How to use it
Soak the soya meat in boiling water for 5 minutes, then drain and squeeze out the water. Mix it with the contents of the sachet and leave it to marinate for 5 minutes. Heat 2 tbsp of oil, fry mustard seeds, curry leaves and sliced onion for 3 minutes, add sliced tomatoes and cook for 3 to 4 minutes, then add the marinated soya and the other ingredients and sauté for around 5 minutes until dry. Serve hot with rice, roti or string hoppers.
