Delmege Soya Roast Chicken Flavour is textured soya protein from the Sri Lankan food house Delmege, with a spice sachet built around roasted spices and a roast chicken flavour. Coriander, cumin and fennel lead, followed by chilli, fenugreek, cinnamon, cloves, cardamom, pandan, curry leaves, lemongrass, pepper, mace, nutmeg and ginger, giving a darker, more toasted curry than the plain chicken flavour. How to use it
Soak the soya meat in boiling water for 5 minutes, then drain and squeeze out the water. Mix it with the contents of the sachet and leave it to marinate for 5 minutes. Heat 2 tbsp of oil, fry mustard seeds, curry leaves and sliced onion for 3 minutes, add sliced tomatoes and cook for 3 to 4 minutes, then add the marinated soya and the other ingredients and sauté for around 5 minutes until dry. Serve hot with rice, roti or string hoppers.
