Delmege Soya Prawn Flavour is textured soya protein from the Sri Lankan food house Delmege, sold with a prawn flavour spice sachet for a soya take on isso curry. The seasoning is short and hot: chilli, prawn flavour, pepper, turmeric, curry leaves and pandan leaves, with a little corn flour that helps the spices cling to the soya as it fries. How to use it
Soak the soya meat in boiling water for 5 minutes, then drain and squeeze out the water. Mix it with the contents of the sachet and leave it to marinate for 5 minutes. Heat 2 tbsp of oil, fry mustard seeds, curry leaves and sliced onion for 3 minutes, add sliced tomatoes and cook for 3 to 4 minutes, then add the marinated soya and the other ingredients and sauté for around 5 minutes until dry. Serve hot with rice, roti or string hoppers.
