Delmege Soya Meat is plain textured soya protein from the Sri Lankan food house Delmege, made from defatted soya flour and shaped into small round nuggets. With no seasoning of its own, it takes on whatever spices you cook it with, which makes it a useful base for Sri Lankan soya meat curry, devilled soya and vegetarian versions of meat dishes. How to use it
Soak the nuggets in boiling water for 5 minutes, then drain and squeeze out the water. Marinate them with chilli powder, turmeric, salt and your curry powder for 5 minutes. Heat 2 tbsp of oil, fry mustard seeds, curry leaves and sliced onion for 3 minutes, add sliced tomatoes and cook for 3 to 4 minutes, then add the soya and sauté for around 5 minutes until dry, or simmer it in coconut milk for a gravy curry. Serve hot with rice or roti.
