Delmege Soya Curry Flavour is textured soya from the Sri Lankan food house Delmege, labelled as soya nuggets with a curry flavour seasoning. The spice mix brings coriander, chilli, cumin, fennel, garlic, cinnamon, methi, screw pine (pandan) leaves, curry leaves and lemongrass, the backbone of a Sri Lankan curry, ready to coat the soaked nuggets. How to use it
Soak the soya meat in boiling water for 5 minutes, then drain and squeeze out the water. Mix it with the contents of the sachet and leave it to marinate for 5 minutes. Heat 2 tbsp of oil, fry mustard seeds, curry leaves and sliced onion for 3 minutes, add sliced tomatoes and cook for 3 to 4 minutes, then add the marinated soya and the other ingredients and sauté for around 5 minutes until dry. Serve hot with rice, roti or string hoppers.
