Delmege Soya Chicken Flavour is textured soya protein from the Sri Lankan food house Delmege, sold with a sachet of chicken flavour spice mix for a quick soya meat curry. The defatted soya chunks soak up the seasoning of coriander, chilli, cumin, fennel, fenugreek, cinnamon, cloves, cardamom, pandan and curry leaves, giving the warm, aromatic heat of a Sri Lankan chicken curry. How to use it
Soak the soya meat in boiling water for 5 minutes, then drain and squeeze out the water. Mix it with the contents of the sachet and leave it to marinate for 5 minutes. Heat 2 tbsp of oil, fry mustard seeds, curry leaves and sliced onion for 3 minutes, add sliced tomatoes and cook for 3 to 4 minutes, then add the marinated soya and the other ingredients and sauté for around 5 minutes until dry. Serve hot with rice, roti or string hoppers.
