Daily Delight Tender Jack is young, unripe jackfruit cut into chunks and frozen in Kerala, ready to cook without the sticky work of cutting a whole fruit. Tender jackfruit, known as idichakka or kathal, has a mild flavour and a firm, meaty texture that soaks up spices, making it a favourite for thoran, curries and vegetarian dishes. How to use it
Remove the amount you need and thaw it in a bowl in the fridge overnight, or place it in a colander under cold running water for a quick thaw. Boil the pieces with turmeric and salt until soft, then crush and stir fry with coconut, mustard seeds and curry leaves for idichakka thoran, or simmer in a spiced onion and tomato gravy for kathal sabzi. It also works in biryani and Sri Lankan polos curry. Reseal the bag and return it to the freezer.
