Daily Delight Snake Gourd is tender snake gourd, cleaned, cut and frozen in Kerala, so it is ready to cook without peeling or deseeding. Snake gourd, known as padavalanga or pudalangai, has a mild, slightly sweet flavour and soft bite that suits South Indian and Sri Lankan cooking. The 400g bag holds about four servings. How to use it
Remove the amount you need and thaw it in a bowl in the fridge overnight. Stir fry it with mustard seeds, curry leaves, green chilli and grated coconut for thoran or poriyal, cook it with moong dal for kootu, or add it to sambar and aviyal. It also works in a simple dal or a Sri Lankan style coconut milk curry. Reseal the bag and return it to the freezer.
