Daily Delight Sliced Coconut is fresh coconut cut into thin slices and frozen in Kerala, ready for the dishes where coconut pieces add bite. Coconut slices, called thenga kothu in Kerala, are fried golden in beef and chicken ularthiyathu, mixed into Kerala style chicken curry and kootu curry, and roasted for sweets. How to use it
Remove the amount you need and thaw it in a bowl in the fridge overnight, or place it in a colander under cold running water for a quick thaw. Fry the slices in coconut oil until golden, then add them to meat roasts, chicken curry, kootu curry and vegetable stir fries, or toss them through rice. They can also be roasted with jaggery for a simple sweet. Reseal the bag and return it to the freezer.
