Coco Fresh Coconut Milk Powder is coconut cream from Sri Lankan coconuts, spray dried into a fine white powder that dissolves in water to give coconut milk on demand. It keeps for months in the cupboard, so there is always coconut milk for a curry without opening a tin for a few spoonfuls. Mix it thin for everyday curries or thick for rich gravies and sweets. How to use it
For thin milk, stir 1 tbsp of powder into 150ml of water; for thick milk, use 2 tbsp in 150ml. Mix it into warm water until smooth, then add it to Sri Lankan fish curry, dhal, kiri hodi, chicken curry or a Kerala stew towards the end of cooking. Stir the powder straight into kiribath, milk toffee, puddings and watalappan, or sprinkle it into a curry for extra body. Keep the bag closed with a dry spoon inside, or tip it into an air tight container once opened.
