Chandra Masala Papdi is gram flour papdi fried thin and crisp, then seasoned with chilli powder and black salt. It is the spiced version of the plain besan papdi: the same nutty besan crunch with a red chilli warmth and the tangy, slightly sulphurous savour of kala namak that chaat lovers know well. How to use it
Put out a bowl with chai or a cold drink, or serve it as part of a Gujarati breakfast with fried green chillies and chutney. Crumble it over bhel, chaat or a bowl of curd rice for crunch and a hit of spice. Keep the bag sealed between servings so the papdi stays crisp.
