Ceylon Fish Tuna Ambulthiyal is balamalu ambulthiyal, skipjack tuna cut into chunks and cooked slowly with goraka, chilli and spices until the sauce clings dark and sour to the fish. It is the classic fish ambulthiyal of the Sri Lankan south coast, made to keep, with tuna at 75% of the jar and coriander, cumin, fennel and cardamom behind the sourness. It is ready to eat. How to use it
Warm a few pieces in a pan or serve them as they are with rice, dhal and a coconut sambol. It is good with bread or roast paan for a quick meal, and a little flaked through hot rice with sliced onion makes a simple lunch. Use a clean spoon, refrigerate after opening and finish within seven days.
