Ceylon Fish Sprats Ambulthiyal is haalmessan ambulthiyal, small sprats slow cooked with goraka until the sauce reduces to a dark, sour and spicy coating. Ambulthiyal is the old Sri Lankan way of cooking fish dry and sharp with goraka so it keeps well, and this jar follows the same idea with sprats at 75%, chilli powder, coriander, cumin, fennel and cardamom. How to use it
Serve it at room temperature or warmed through as one curry on a rice and curry plate, next to dhal, a mallung and papadam. It pairs well with plain white rice, red rice or string hoppers, and a spoonful goes a long way because the flavour is concentrated. Use a clean spoon, keep the jar in the fridge once opened and finish within seven days.
