Ceylon Fish Fried Sail Fish is thalapath karawala baduma, dried sailfish fried with onions, chilli pieces, curry leaves and pandan leaves. Thalapath is one of the most prized fish in Sri Lankan cooking, and dried, it keeps a dense, meaty bite. Frying with plenty of onion gives this jar a sweeter, darker finish than the other fried fish in the range, lifted by pandan. It is ready to eat. How to use it
Serve it as a side dish with rice and curry, with pol roti and coconut sambol, or with string hoppers and a thin kiri hodi. A spoonful folded through hot rice with a squeeze of lime makes a quick meal. Use a clean, dry spoon, keep the jar in the fridge once opened and finish within seven days.
