Queen fish is a firm, meaty fish, and once dried and fried it turns chewy at the centre and crisp at the edges, with the deep salt of karawala and a steady chilli heat. The jar is ready to eat. How to use it
Serve a few pieces as a side with rice, dhal and a vegetable curry, the way a karawala baduma sits on a Sri Lankan lunch plate. It goes well with kiribath and lunu miris at breakfast, or with bread and a cup of plain tea. Warm it for a minute in a dry pan if you like it extra crisp. Use a dry spoon, refrigerate after opening and finish within seven days.
