BTM Maldive Fish Chips are dried skipjack tuna, Katsuwonus pelamis, cut into small chips and packed in a glass jar. Maldive fish, umbalakada in Sinhala, is the quiet backbone of Sri Lankan cooking: a little pounded into a sambol or stirred into a curry gives a deep, smoky, savoury flavour that nothing else quite replaces. How to use it
Pound a tablespoon of chips with red onion, dried chilli, salt and lime, then mix through freshly grated coconut for pol sambol, or fry with onions and chilli flakes for seeni sambol and katta sambol. A small handful added to a potato, pumpkin or green bean curry, or to a mallum of shredded greens, rounds out the flavour. For a finer texture, grind the chips to a coarse powder before cooking. Close the lid tightly after each use.
