BTM Jack Mackerel in Brine is a single 425g tin of Chilean jack mackerel, Trachurus murphyi, caught by purse seine in the South Pacific and packed simply in water and salt. Once drained there is 280g of firm, meaty fish with a fuller flavour than tuna, and 23g of protein and 2.06g of omega 3 per 100g. With its label in Sinhala and Tamil as well as English, it is a familiar store cupboard tin in Sri Lankan and South Indian homes, ready for a quick curry or cutlets. How to use it
Drain the brine and break the fish into chunks, lifting out the central bone if you prefer. For a quick Sri Lankan style curry, temper mustard seeds, curry leaves and sliced onion, add garlic, green chilli, chilli powder and turmeric, then the fish, a splash of coconut milk and a squeeze of lime and simmer for a few minutes. It also makes crisp fish cutlets with mashed potato and breadcrumbs, a devilled fry with peppers and tomato, or a filling for rolls, sandwiches and wraps.
