Borwick's Bicarbonate of Soda is pure sodium bicarbonate from a baking name that dates back to 1842, packed in a small tin with a press-on lid that keeps the powder dry between bakes. It is the raising agent that gives gingerbread, drop scones, parkin and crumpets their lift, and many Indian cooks reach for a pinch when making bhajis, pakoras, dhokla or bhature. The tin carries no preservatives and is suitable for vegetarians. Find more raising agents in our Baking Powder & Soda range.

      How to use it

Use the exact amount your recipe asks for, measured with a dry spoon. The tin suggests using it with an equal quantity of cream of tartar if sour milk is in the recipe, otherwise double the quantity of cream of tartar. When cooking very acidic fruit, add half a teaspoon to the water for every 450g (1lb) of fruit to take away the sourness and save on sugar. Replace the lid straight after use.
