Bodrum Mini Cornichons are small, firm gherkins packed whole in a sharp vinegar brine, the little pickles known in Turkish as kornişon turşusu and in French kitchens as cornichons. Calcium chloride keeps them crisp and citric acid adds a clean sourness, with no sugar syrup, so they stay crunchy and tangy. How to use it
Serve them straight from the jar on a mezze or breakfast plate with white cheese, olives, tomatoes and bread, the way Turkish kahvaltı is laid out. Slice them into burgers, sandwiches and wraps, or chop them finely into tartare sauce, potato salad and coleslaw for a sharp bite. They go well beside pâté, cold meats and a cheese board, and a few cornichons with pickled onions make a quick side for grilled kebabs. Use a clean fork to lift them out so the rest stay in the brine.
