Baba's Hot & Spicy Meat Curry Powder is the fiery version of the Malaysian meat curry blend from Baba's, made for the rich, red chicken, mutton and beef curries of Malaysian and Singaporean Indian kitchens. Coriander and chilli lead, with fennel, cumin and turmeric, white and black pepper, and the warm whole spices of a kari daging: cinnamon, cardamom, star anise, bay leaf, clove and nutmeg. How to use it
The chicken curry on the back serves 5. Saute 1 cup of cooking oil with cinnamon, star anise, cloves, cardamom, cumin and fennel seeds, a sliced onion, curry leaves and blended garlic and ginger for 3 minutes. Add half a chicken (500g), 2 potatoes and 2 tomatoes and cook with the lid on for 3 minutes. Add 7 tbsp (75g) of the curry powder, 1 tbsp of salt and 4 cups (900ml) of water, cover and cook for 15 minutes. Finish with 14 cashew nuts blended with 200ml of water, lower the flame and cook for 3 more minutes.
