Ashoka Carrot Murabba is carrot preserved in a sugar syrup, the gajar murabba of North Indian homes, where carrots are slowly candied until they turn tender, glossy and jewel red. Carrot makes up 55% of the jar, with sugar, water, citric acid and a preservative. The result is sweet with a soft, earthy carrot flavour, a traditional treat served a piece at a time, here in a generous 1kg jar. How to use it
Lift out a piece with a clean, dry spoon and enjoy it after a meal or with a paratha breakfast. Slice it over plain yoghurt or shrikhand, or chop it into gajar halwa, kheer and rice pudding for extra colour and sweetness. The syrup can be drizzled over ice cream or stirred into a glass of cold milk. Keep the lid closed and the jar out of direct sunlight between servings.
