Ahmed Lime Pickle in Oil is a Pakistani nimbu ka achar of whole lime cut into pieces, which make up 60 to 64% of the jar. The lime is cured with salt, acetic acid and citric acid, then set in rapeseed oil with red chilli, fennel, fenugreek, turmeric, mustard, cumin seed and nigella. Over time the peel softens and the pickle turns sour, salty and spicy, with the bitter edge of lime rind that pickle lovers look for. The 1kg tub keeps a busy kitchen stocked for months. How to use it
Put a piece or two beside dal chawal, khichdi, curd rice or a plate of biryani, or eat it with aloo paratha and a glass of lassi. Finely chopped lime pickle mixed with a little yoghurt makes a sharp dip for poppadoms, and a spoon of the spiced oil livens up a plain potato sabzi. With 7.5g of salt in every 100g, a small serving goes a long way. Use a clean, dry spoon, press the pieces back under the oil and keep the tub in the fridge once opened.
