Ahmed Garlic Pickle in Oil is a Pakistani style lehsan ka achar of whole peeled garlic cloves, which make up 60 to 64% of the jar. The cloves are cured in salt and acetic acid, then packed in rapeseed oil with red chilli, fennel, fenugreek, turmeric, mustard, cumin seed and nigella. Pickling takes the raw bite out of the garlic and leaves it mellow, tangy and spiced, with a warm heat from the chilli. The 1kg tub suits families and anyone who eats pickle with most meals. How to use it
Serve a few cloves with a little of the spiced oil on the side of dal and rice, with parathas and plain yoghurt, or with a meat or vegetable curry. Chopped cloves lift a cheese toastie or a plate of boiled potatoes, and a spoon of the oil stirred into a tadka adds pickle flavour to plain dal. The jar has 7.5g of salt in every 100g, so a small serving is enough. Use a clean, dry spoon, keep the cloves under the oil and refrigerate once opened.
