Aachi Rasam Powder is a ground spice blend for rasam, the thin, peppery tamarind and tomato broth that closes a South Indian meal and doubles as a warming soup on a cold day. Coriander, red chilli and cumin are balanced with plenty of black pepper, turmeric, fenugreek, garlic and asafoetida, and a little toor dhal rounds out the body. How to use it
Following the pack, heat 1 tbsp of oil in a pan, add ½ tsp of mustard, half a broken red chilli, 3 to 4 crushed garlic cloves and a sprig of curry leaves and saute well. Soak a lemon sized ball of tamarind in hot water for 10 to 15 minutes, squeeze out the pulp to 500ml and add it with 1 medium mashed tomato and 1 tbsp of Aachi Rasam Powder. Add salt to taste and turn off the flame just before it boils, then garnish with chopped coriander. Serve with steamed rice or drink it as a soup. The pack says this serves 6 to 8.
