Aachi Prawn Fry Masala is a ready coating mix for eral varuval, the dry, spicy prawn fry of the Tamil and Chettinad coast. Red chilli, coriander, garlic, cumin, onion, fennel and black pepper give a hot, aromatic crust, while corn flour and Bengal lentil help it crisp up in the oil and paprika extract adds a deep red colour. How to use it
Following the pack, take 250g of cleaned prawns and add 1 tbsp of Aachi Prawn Fry Masala, the salt you need and the juice of half a lemon. Mix well and leave to marinate for 30 minutes, then deep fry in hot oil until crisp and cooked through. Serve hot with onion rings. The pack says this serves 6 to 7. The same mix can be pan fried in a little oil with curry leaves for a lighter varuval, and also suits squid, fish fillets or king prawns on the grill.
