Aachi Mango Thokku Pickle is a Tamil style thokku made from grated mango preserved in salt and spices. Grating the raw mango gives a soft, spoonable relish in place of chunky pieces, so it mixes evenly into rice and spreads easily over chapati or dosa. The mango is set in rice bran oil with red chilli powder, mustard, fenugreek and asafoetida for a tangy, salty flavour, and the label marks it as medium heat with no artificial flavours or colours. How to use it
Stir a spoonful into hot rice with a little gingelly oil or ghee for a quick mango rice, or serve it beside curd rice, where the sour, spicy thokku is a classic pairing. It also makes a lively spread inside a chapati roll, a dip for dosa and idli, or a side for upma and pongal. At 13g of salt per 100g, a small amount goes a long way. Use a clean, dry spoon every time, keep the surface covered with oil and refrigerate after opening.
