Aachi Mango Avakkai Pickle takes its name from avakaya, the famous raw mango pickle of Andhra Pradesh, where tart green mango pieces are preserved with salt, red chilli and mustard. This jar follows that pattern: mango pieces in rice bran oil, seasoned with red chilli powder, mustard, fenugreek and asafoetida, giving a sour, salty pickle with the sharp bite of mustard. How to use it
The Andhra way is to mix a piece or two, with some of the spiced oil, into hot rice with a spoon of ghee and eat it just like that. It is just as good beside curd rice, dal and rice, chapati or dosa, or with a simple bowl of khichdi. As the pickle carries 13g of salt per 100g, a small amount is plenty. Always use a clean, dry spoon, keep the mango pieces under the oil and refrigerate the jar after opening.
