Aachi Kadai Chicken Masala is a spice blend for kadai chicken, the onion and tomato curry cooked quickly in a deep, two handled kadai. Coriander and cumin lead, with black pepper, dry ginger and red chilli for warmth, turmeric for colour, and cloves, cinnamon and fennel for a sweet, aromatic finish. Salt is not in the ingredients list, so you season the dish to taste as the pack recipe does. It comes in a 100g carton packed in India. How to use it
Following the pack, heat two tablespoons of oil, add two whole dried red chillies and curry leaves, then fry one and a half large chopped onions until golden brown. Add one and a half medium tomatoes and cook until mushy, stir in one and a half tablespoons of ginger garlic paste, then add 300g of chicken pieces and mix well. Add one tablespoon of the masala, saute well and salt to taste, then cover and cook until the chicken is tender. Garnish with coriander leaves and serve with steamed rice or roti; the recipe serves 6 to 8. Strips of green pepper added near the end give the classic kadai look.
