Aachi Gobi Manchurian Mix is a seasoned batter mix for gobi manchurian, the Indo-Chinese dish of crisp fried cauliflower florets tossed in a sticky, spicy sauce. Refined wheat flour, corn flour and rice flour give a light, crunchy coating, while black pepper, red chilli, onion and garlic powder and dry ginger season it, and paprika adds the familiar red colour. Just add water to make the batter. It is made in India and packed in a 100g carton, and the pack suggests serving it with noodles or fried rice. How to use it
Cut a medium cauliflower into small florets and wash them. Following the pack, mix a tablespoon of the mix with a tablespoon of water into a thick batter, coat the florets and leave for 2 minutes, then fry in hot oil until evenly golden. In a pan, heat three tablespoons of oil and saute a teaspoon each of chopped ginger, garlic and green chilli, then add three quarters of a cup of spring onion whites and half a cup of capsicum. Stir in soy sauce, chilli sauce, tomato ketchup, pepper and salt, toss in the fried florets for 2 to 3 minutes and finish with spring onion greens.
