Aachi Garam Masala is a ground blend of warming spices for finishing Indian curries, biryanis and gravies. Cinnamon, clove, mace, star anise and bay leaf bring the sweet, fragrant notes, with coriander, cumin, black pepper and fennel rounding out the mix. Unlike many garam masalas, this blend also includes red chilli powder and a little salt, giving dishes gentle heat as well as aroma. How to use it
The pack suggests adding a tablespoon to a dish. Stir it into chicken, mutton or vegetable curries in the last few minutes of cooking so the fragrance stays fresh, or sprinkle it over a pot of biryani or pulao before the final steam. A pinch also brightens dal, chana masala, keema and roasted vegetables. As the blend already contains chilli and salt, taste before adding more of either.
