Aachi Fish Fry Masala is a ready seasoned rub for meen varuval, the crisp, chilli red fried fish served with rice and curry across South India; the Tamil name is printed on the side of the pack. Red chilli powder leads the blend, with coriander, turmeric, cumin, black pepper, fenugreek and mustard for flavour, and citric acid for the sour lift usually given by lemon. Salt is already in the mix, so the pack says there is no need to add more. It is made in India and packed in a 100g carton. See more blends for seafood in our Fish Masala range.
How to use it
Mix a tablespoon of the masala with 50ml of water into a smooth paste and spread it over 300g of cleaned fish pieces or steaks. Leave them to marinate for an hour, then fry in a little hot oil in a shallow pan until crisp on both sides and cooked through. The pack also suggests the same rub for slices of yam and potato, which fry up into a spicy side dish. Serve with lemon wedges, sliced onion and rice with rasam or sambar.
