Aachi Chilli Chicken Masala is a ready blend for chilli chicken, the Indo-Chinese favourite of crisp fried chicken tossed with onion, green chilli and capsicum. Red chilli powder and garlic lead the flavour, with a touch of sugar, cinnamon and cloves for warmth and depth, and corn flour so the same blend turns into a light batter when mixed with water. How to use it
Mix 250g of boneless chicken with a teaspoon of ginger garlic paste, two teaspoons of the masala and just enough water to coat every piece in batter, then leave it for about 30 minutes. Deep fry over high heat at first, then lower the flame until the chicken is cooked through. In a pan, heat two tablespoons of oil and saute one chopped onion, two slit green chillies and a cup of sliced capsicum with a teaspoon of the masala. Toss in the fried chicken, garnish with chopped coriander and serve hot.
