Aachi Chicken Lollypop Masala is a ready spice blend for chicken lollipop, the crisp, fiery red starter made from chicken drumsticks or wings with the meat pushed to one end of the bone. The blend does two jobs at once: chilli powder, coriander, onion and garlic flakes, dry ginger, fennel and black pepper season the chicken, while corn flour, rice and refined wheat flour build the crunchy coating. Paprika oleoresin gives the finished pieces their bold red colour. It is made in India and packed in a 100g carton. Find more blends for chicken in our Chicken Masala range.
How to use it
The pack method starts with one egg white mixed with a teaspoon of ginger garlic paste and a tablespoon of the masala into a thick paste. Rub it over 250g of cleaned chicken drumstick pieces and leave them to rest for 45 minutes. Deep fry the marinated chicken in hot oil until crisp and cooked through, then serve hot. This serves 3 to 4 people. Fry in small batches so the oil stays hot and the coating stays crunchy, and set the lollipops out with a chilli dip or lime wedges.
