Aachi Chicken Curry Masala is a South Indian blend for chicken kulambu, the everyday Tamil chicken curry cooked with onion, tomato and a splash of coconut milk. Coriander and chilli lead, with fennel, cumin, garlic and onion flakes, kasuri methi, turmeric and the whole spices of a Chettinad style kitchen: cinnamon, bay leaf, black pepper, cloves, star anise and green cardamom. A little gram dhal helps the gravy thicken. The pack notes it works for vegetable curry too. Find more blends for chicken in our Chicken Masala range.
How to use it
Following the pack, heat 1 tbsp of oil in a pan, add 2½ medium onions, 1 tbsp of ginger garlic paste and 2½ chopped tomatoes and fry until golden brown. Add 300g of cleaned chicken pieces and saute with 1 tbsp of Aachi Chicken Curry Masala. Add salt to taste, 200ml of water and 2 tbsp of coconut milk, then cook for 10 to 15 minutes for a thick gravy. Garnish with chopped coriander and serve hot with steamed rice or roti. The pack says this serves 6 to 8.
