Aachi Chicken 65 Masala is a ready coating and marinade mix for chicken 65, the fiery red fried chicken starter that began in Chennai and is now on restaurant menus across South India. Chilli powder, garlic, dry ginger, black pepper and green cardamom give the heat, while refined wheat flour, gram dhal, rice and corn flour form the crisp crust once the chicken hits the oil. How to use it
Following the pack, mix 300g of boneless chicken pieces with 1 tbsp of Aachi Chicken 65 Masala, 2 to 3 drops of vinegar, 1 tbsp of ginger garlic paste and salt to taste. Mix well and leave aside for 30 minutes. Deep fry the pieces on a low flame in a shallow pan until cooked through and crisp. The pack suggests serving with mayonnaise; a squeeze of lime, sliced onions and fried curry leaves are traditional too. The same coating works on cauliflower, paneer or prawns.
