7Ray Organic Coconut Sugar is made from the sap of coconut palm flowers collected on organically managed plantations in Sri Lanka, then cooked down and dried into golden brown granules. The single ingredient is organic coconut sap, and the pack lists no additives or artificial flavours. It tastes of light caramel with a soft toffee note, closer to jaggery than to white sugar, and it pours and measures like ordinary granulated sugar. How to use it
The pack suggests it for sweetening baked goods, drinks, sauces and dressings, and as a natural alternative in your favourite recipes. Use it spoon for spoon in place of brown sugar in cakes, cookies and granola. In South Asian cooking it suits sweets that usually take jaggery, such as payasam, wattalappan, kozhukattai filling and coconut barfi, and it dissolves quickly in tea, coffee and milk. A pinch also rounds off the sourness in a tamarind curry or a sambol.
