777 Tomato Rice Mix is a ready masala paste for thakkali sadam, the spiced tomato rice of Tamil Nadu. Tomato makes up 58% of the jar, cooked down in gingelly oil with tamarind, a little jaggery, urad dal, chilli powder, cumin, mustard seeds, fenugreek, coriander, turmeric and asafoetida. How to use it
The jar says to mix 2 teaspoons, about 20g, of the paste with 1 cup, about 125g, of cooked rice in a clean, dry bowl, combine thoroughly and set aside for 2 minutes. For extra taste, garnish with fresh coriander leaves and cashew nuts roasted in gingelly oil. The pack suggests serving it with thick fresh coconut chutney and sambar. A spoonful stirred into hot rice with a few fried onions and peas makes a quick weekday tomato pulao, and it packs well for lunch boxes.
