Switz is a frozen pastry brand best known in South Asian kitchens for its samosa leaves, also called samosa pastry or pads. Each leaf is a thin, lightly cooked strip of wheat dough, made from refined wheat flour, water, salt and a little vegetable fat, so it folds cleanly into a cone and fries up crisp and blistered without any rolling.
On our shelves Switz sits in frozen pastry and samosa leaves, part of the frozen snacks and sides section of our frozen department. The pack holds fifty leaves, which is enough for a large batch of samosas for a family gathering, an iftar table or the freezer.
Thaw the leaves as the pack directs and keep them under a damp cloth while you work so the edges stay soft. Fold each strip into a cone, fill it with a potato and pea mix spiced with cumin seeds and garam masala, or with spiced minced meat, and seal the edge with a paste of flour and water. Fry until golden, or brush with oil and bake. The same leaves wrap spring rolls and cheese and chilli cigar rolls.
Keep frozen at -18°C. When there is no time to fold, ready made frozen samosas and spring rolls are close by.
