East End Sago Seeds Medium are medium-sized tapioca pearls, the sabu dana that fills plates on fasting days. Packed in the UK and marked suitable for vegans, they are a little larger than the small grade, which gives a chewier bite and pearls that stay separate in khichdi. The 400g pack covers several vrat meals during Navratri.
How to use it
Rinse the pearls until the water is nearly clear, then soak overnight with water just level with the sago. Drain and check that a pearl squashes easily. For a sweet sabudana kheer, bring a litre of milk to the boil, add a cup of soaked pearls and simmer, stirring often, for fifteen to twenty minutes until they turn glassy. Sweeten with sugar or jaggery, add crushed cardamom and scatter with chopped nuts. For a savoury plate, temper in ghee with cumin, chilli and peanuts and finish with lemon.
