Annam Sago Small is fine sabudana made from tapioca flour and water, a produce of India imported by Transfood International. The small pearls soak through quickly and hold their shape when cooked, so they suit khichdi, vada, thalipeeth and kheer alike. With Navratri fasting in full swing, the 500g bag covers several days of vrat meals for the family.
How to use it
Wash the sago until the water is less cloudy, drain, and leave it covered with a thin layer of water for four to six hours. For sabudana vada, mash the soaked pearls with boiled potato, crushed roasted peanuts, green chilli, coriander and rock salt, shape into flat rounds and fry in hot oil until crisp and golden. Serve with a sweet curd or a green chutney made without onion and garlic. Leftover soaked sago keeps in the fridge for a day and makes a quick khichdi the next morning.
