East End Sago Seeds Medium are tapioca pearls a size up from the small grade, cleaned in the UK by East End and packed in a 1.5kg bag. Medium sabudana holds its shape well when soaked, so it gives distinct, chewy pearls in khichdi and a good texture in vada. It is a fasting-day staple for Navratri, Ekadashi and other vrat days, when grains such as rice and wheat are set aside.
How to use it
Medium pearls need a little longer to soften than small ones. Rinse well, then soak overnight in water that just covers the pearls. In the morning, drain and leave in a sieve for half an hour. For khichdi, fry cumin seeds and green chilli in ghee, add diced boiled potato, then the sago with crushed roasted peanuts and rock salt, and stir over a low heat until every pearl is clear. For kheer, simmer soaked pearls in milk with sugar and finish with cardamom.
