Sarson ka saag is the Punjabi winter dish of mustard greens cooked down slowly with ginger, garlic and green chilli and thickened with maize flour. TRS make it with 94 per cent green mustard leaves, so it keeps the sharp, peppery bite of real sarson. This 450g tin serves two with roti.
How to use it
Heat it gently, stirring, until piping hot, then pour over a tarka of garlic and a pinch of red chilli fried in ghee or butter. The proper way is with makki di roti, a knob of white butter and a piece of gur, but plain chapati and a raw onion work very well on a weeknight.
