TRS Kewra Water is a clear flavouring water made with the scent of the kewra, or screwpine, flower. It has a sweet, heady, floral aroma that is a signature of Mughlai and Hyderabadi cooking. TRS describe it as used primarily to enhance the taste of Indian sweets and desserts such as barfi and rasmalai. It is produced in India and sold in a 190ml glass bottle.
How to use it
A little goes a long way. Sprinkle a teaspoon over the top layer of a dum biryani with saffron milk and fried onions before sealing the pot. Add a few drops to the syrup for gulab jamun, to rasmalai milk, or to barfi and peda mixtures just before setting. For Diwali kheer or phirni, stir in half a teaspoon once the pan is off the heat so the fragrance stays fresh.
