Top-Op Kala Jeera is black cumin seed, also sold as shahi jeera: thin, dark, curved seeds with a sweeter, more delicate and slightly smoky flavour than everyday white cumin. It is the cumin of Mughlai and North Indian rice dishes, used where a refined, aromatic finish matters. This 100g pack is a produce of Pakistan, packed for Top Op Foods of Stanmore.
How to use it
Fry half a teaspoon in hot ghee for a few seconds, until fragrant but not dark, to start a pot of biryani, pulao or jeera rice, then add whole spices and onions. Kala jeera also goes into homemade garam masala, kormas and rich paneer gravies for Diwali dinners, and a pinch can be dry-roasted and crushed over raita or kebabs. Because the seeds are delicate, add them early in hot fat and keep the heat moderate. The pack notes that a few stalks may remain, so pick through before use.
