Samayal Black Cumin Seeds are the slender, dark seeds sold as kala jeera, black jeera and shahi jeera, and as karum seeragam in Tamil. They are thinner and darker than everyday cumin, with a sweeter, smoky flavour that is prized in Mughlai and Kashmiri cooking. This 100g pack is packed in the UK by Haran Foods and is a sensible size for a spice used in pinches.
How to use it
Shahi jeera is at its best fried whole in hot ghee at the start of a dish. Add half a teaspoon to the pan with bay leaf, cardamom and cinnamon when you start a biryani, pulao or korma, and let the seeds crackle for a few seconds before the onions go in. A pinch in the tadka for dal or in a festive paneer gravy adds a deeper aroma than ordinary jeera. Use it sparingly, as the flavour is stronger, and toast and grind it into garam masala for special occasions.
