Soghaat Desi Shakkar is unrefined cane sugar, the soft, crumbly golden-brown sweetener made by boiling sugarcane juice and drying it into granules. It has the caramel depth of jaggery but pours and measures like sugar, so it is easy to spoon into everyday cooking. This 500g jar is packed in India and imported by Nuovo Foods in West Bromwich, with a screw lid to keep it dry.
How to use it
Stir a spoonful into masala chai or hot milk in place of white sugar. For Navratri and Diwali sweets, use it in sooji or atta halwa, besan laddoos, sheera and gur rice, where it dissolves quickly and gives a warm colour. Many households simply serve desi shakkar with a dollop of ghee alongside rotis after a meal. It also works in flapjacks and spiced cakes as a swap for light brown sugar. Close the lid tightly after use, as it draws moisture.
