Shri Hershne Palm Candy is panam kalkandu, the crystallised sugar candy made from the sap of the palmyrah palm. The single ingredient is palmyrah juice, boiled and set into amber, rock-like crystals with a gentle caramel sweetness that is softer than white mishri. It is a long-standing store-cupboard staple in South Indian and Sri Lankan homes, and this 200g screw-top jar is packed in India for Shri Hershne in Ilford.
How to use it
Drop a few pieces into hot milk with a pinch of turmeric and black pepper and stir until they melt for a classic bedtime drink. Crush a spoonful to sweeten payasam, panakam for Rama Navami or a jug of nannari sherbet, or pound it with dry ginger for a simple homemade blend. Many families also keep palm candy for puja offerings and prasad. Always use a dry spoon, and keep the jar in the fridge once opened.
