Kaaviya Foods Palmyrah Jaggery is palm jaggery made from the sap of the palmyra palm, known in Tamil as panangkarupatti. It sets into dark, cone-shaped cakes with a smoky, almost liquorice-like sweetness that is quite different from cane gur. The 250g reusable tub is a product of India, distributed by Kaaviya in Enfield.
How to use it
Grate or crush a cake and dissolve it in hot milk for karupatti coffee or tea, the traditional way to sweeten a morning cup in southern Tamil Nadu. Melt it with a little water and strain the syrup for paal payasam, sweet pongal, kozhukattai filling or coconut barfi for Diwali. A small piece added to tamarind-based kuzhambu rounds out the sourness. Keep the lid tight so the cakes stay firm.
