Shan Special Kheer Mix is a traditional dessert mix for milk and rice pudding from Shan Foods of Karachi. The box holds broken rice, cane sugar, pistachio nuts, green cardamom and saffron, with a screw pine flavour in the style of kewra, so the only thing you add is milk. It makes a creamy, delicately scented kheer that serves five to six people.
How to use it
Add the mix to one litre of milk and cook for fifteen to twenty minutes, stirring frequently. When it thickens, remove from the heat, allow it to cool and serve cold. For kheer khas, reduce two litres of milk by half over a low heat for two to three hours before adding the mix. For lauki kheer, add half a cup of boiled, shredded bottle gourd once the mixture thickens, cook for ten minutes more, then stir in half a cup of fresh cream off the heat. Garnish with chopped pistachios for Diwali or Eid.
